Baked Berry Delight

This is so simple, yet so yummy!

1-1/2 cups fresh/frozen berries PER PERSON: blueberries, boysenberries, raspberries, blackberries or mix
Optional:
raisins
chopped walnuts or pecans

  • Preheat oven to 350° F
  • Simply put berries into some type of baking dish: 12×12 or oval or even a souffle dish
  • Top with sprinkling of optional raisins or chopped nuts
  • Cover
  • Baked for 30-45 minutes, depending on whether the berries were fresh or frozen

Carob Peppermint Treats

1 cup pitted dates
1 cup organic raisins
1 cup raw almonds
2 cups rolled oats
1 cup shredded coconut
2 Tbsp raw carob
2 tsp vanilla extract
1/2 tsp peppermint extract
2 Tbsp raw honey

  • Place dates and raisins in food processor and blend into small pieces.
  • Add the almonds, oats, coconut, and carob powder.
  • Blend until the mixture resembles bread crumbs.
  • Add the extracts and honey.
  • Stop the machine, and check if the texture is correct by taking a small amount into the palm of your hand and roll into a ball. If the mixture does not bind, add extra honey or some apple juice.

Cranberry Stuffed Baked Apples

2 Granny Smith apples
1 tablespoon olive oil
1 cup fresh or frozen and thawed cranberries
2 tablespoons honey
1/4 teaspoon ground cardamom
6 dates, pitted and chopped
Zest and juice of 1 orange
2 tablespoons roasted almonds, roughly chopped

  • Preheat oven to 400°F.
  • Cut 1/2 inch off the top of the apples and reserve tops.
  • Use a paring knife or spoon to hollow out the apples, leaving about a 1/2-inch-thick wall and base. Set aside.
  • Add oil to large skillet over medium heat.
  • Add cranberries, honey, cardamom, dates and orange juice and zest and cook until cranberries begin to collapse and liquid thickens, 3 to 4 minutes.
  • Stir in almonds.
  • Spoon cranberry mixture into apples then replace the apple tops.
  • Put into a small baking dish filled with 1/4 inch water, cover with foil and bake until tender, 15 to 30 minutes (depending on apples).
  • Uncover, carefully pour off the water and continue baking until very tender and golden, 10 to 15 minutes more

Energy Pudding

A nutritionally balanced blend of easily digestible high-nutrient foods, energy pudding is a great pre-exercise snack.  Brendan Brazier (formulator of Vega)

2 bananas
½ cup dates
¼ cup ground flaxseed
¼ cup roasted carob powder (or cacao nibs to make pudding 100% raw)
1 tbsp coconut oil
1 tsp lemon juice
¼ tsp sea salt

  • In a food processor, combine all ingredients; process until smooth.
  • Variation: Add 2 tsp ground yerba maté for a high-performance version.

Sweet Walnut Balls

1 cup ground or finely chopped walnuts
 (also try substituting tahini)
1 cup grated organic unsulphured coconut
1/2 cup raw carob powder
1/2 cup honey
 or agave
sesame seeds

  • Mix ingredients and form into small balls
  • Roll in sesame seeds
