Roasted Roots

1 beet, peeled
4 carrots, peeled
2 sweet potatoes, peeled
1 onion (red, yellow or sweet)
oil (olive, grapeseed, or coconut)
sea salt
rosemary (optional)

  • Chop and combine ingredients in oven safe dish
  • Drizzle with oil
  • Sprinkle with sea salt
  • Cook at 375 until vegetables are soft
